Savoury fried doughnuts

ricotta cheese g 50
icing sugar g 50
dextrose g 30
salt g 20
grated lemon rind n. 1/2
grated nutmeg n. 1/2
Rhum flavour, drop n. 4-5
grated Parmesan g 150
egg g 150
yolk g 100
fresh cream g 150
flour g 1.000
yeast for pizza g 30

The method is the same of the sweet small doughnuts. Mix the ingredients like in the recipe, change the whip with the leaf or the hook. Let rest the knead and then work it making some small doughnuts. When you have fried them, sprinkle with grated cheese and salt. You can add to the knead other flavours.
