Sunflower seeds short pastry breadstick with celery apple carpaccio and apple granita

Spread the short pastry with the sunflower seeds making a breadstick; cut the apple and the celery in thin slices on a side and dress with oil, fleur de sel and lemon. Prepare the plate with the sesame breadstick, the apple and celery carpaccio and the sweet apple gelato (for the most adventurous, add some pieces of gorgonzola).
